A Chicken Torta is a Mexican-style sandwich featuring a crispy roll filled with flavorful grilled chicken, creamy avocado, refried beans, and fresh veggies. It’s the perfect balance of savory, creamy, and crunchy in every bite.

- 4 bolillo rolls (or any soft sandwich rolls)
- 2 chicken breasts, grilled or shredded
- 1/2 cup refried beans
- 1 avocado, sliced
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/2 cup shredded lettuce
- 1 tomato, sliced
- 1/4 red onion, thinly sliced
- 1–2 jalapeños, sliced (optional, for heat)
- Salt and pepper, to taste
Instructions
- Preheat your grill or a grill pan to medium-high heat. Season the chicken breasts with salt, pepper, and chili powder, and grill for 6–7 minutes per side, or until cooked through. Let the chicken rest for a few minutes, then slice or shred it.
- Slice the bolillo rolls in half lengthwise and toast them lightly on the grill or in a toaster.
- Spread a thin layer of refried beans on the bottom half of each roll.
- In a small bowl, mix the mayonnaise with lime juice and a pinch of salt. Spread this mixture on the top half of each roll.
- Layer the grilled chicken on top of the refried beans. Add slices of avocado, shredded lettuce, tomato slices, red onion, and jalapeño slices (if using).
- Top with the other half of the roll and press down gently to hold everything together.
- Serve immediately with chips or a side of salsa for extra flavor.
Notes
- For extra flavor, you can marinate the chicken in lime juice, garlic, and cumin before grilling.
- Feel free to swap the chicken for carnitas, grilled steak, or tofu for a different variation.
- If you like it spicy, add more jalapeños or a drizzle of hot sauce inside the sandwich.
