Description

A Chicken Torta is a Mexican-style sandwich featuring a crispy roll filled with flavorful grilled chicken, creamy avocado, refried beans, and fresh veggies. It’s the perfect balance of savory, creamy, and crunchy in every bite.


Ingredients

  • 4 bolillo rolls (or any soft sandwich rolls)
  • 2 chicken breasts, grilled or shredded
  • 1/2 cup refried beans
  • 1 avocado, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/2 cup shredded lettuce
  • 1 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 12 jalapeños, sliced (optional, for heat)
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill or a grill pan to medium-high heat. Season the chicken breasts with salt, pepper, and chili powder, and grill for 6–7 minutes per side, or until cooked through. Let the chicken rest for a few minutes, then slice or shred it.
  2. Slice the bolillo rolls in half lengthwise and toast them lightly on the grill or in a toaster.
  3. Spread a thin layer of refried beans on the bottom half of each roll.
  4. In a small bowl, mix the mayonnaise with lime juice and a pinch of salt. Spread this mixture on the top half of each roll.
  5. Layer the grilled chicken on top of the refried beans. Add slices of avocado, shredded lettuce, tomato slices, red onion, and jalapeño slices (if using).
  6. Top with the other half of the roll and press down gently to hold everything together.
  7. Serve immediately with chips or a side of salsa for extra flavor.

Notes

  • For extra flavor, you can marinate the chicken in lime juice, garlic, and cumin before grilling.
  • Feel free to swap the chicken for carnitas, grilled steak, or tofu for a different variation.
  • If you like it spicy, add more jalapeños or a drizzle of hot sauce inside the sandwich.
