- 2 large boneless chicken fillets
- 1 cup uncooked white rice
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, chopped
- 4 garlic cloves
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup plain yogurt
Instructions
- Preheat a skillet over medium heat and prepare your rice cooker or pot.
- Combine parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to make the chimichurri. In another bowl, mix yogurt with minced garlic and a pinch of salt for the garlic sauce.
- Lightly oil the skillet to prevent sticking.
- Season the chicken with salt and pepper and place it in the skillet.
- Cook the chicken for 6 to 7 minutes per side until fully cooked. At the same time, cook the rice until tender and fluffy.
- Slice the cooked chicken and fluff the rice.
- Serve by adding rice to a bowl, topping with chicken, and drizzling chimichurri and garlic sauce on top.
Notes
- Let the chimichurri rest for a few minutes before serving to enhance flavor.
- Slice the chicken against the grain for better texture.
- Adjust salt and acidity to taste before serving.
