Description

A vibrant and satisfying bowl featuring juicy chicken, fluffy rice, fresh chimichurri, and a creamy garlic sauce that brings everything together beautifully.


Ingredients

  • 2 large boneless chicken fillets
  • 1 cup uncooked white rice
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 4 garlic cloves
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain yogurt

Instructions

  1. Preheat a skillet over medium heat and prepare your rice cooker or pot.
  2. Combine parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to make the chimichurri. In another bowl, mix yogurt with minced garlic and a pinch of salt for the garlic sauce.
  3. Lightly oil the skillet to prevent sticking.
  4. Season the chicken with salt and pepper and place it in the skillet.
  5. Cook the chicken for 6 to 7 minutes per side until fully cooked. At the same time, cook the rice until tender and fluffy.
  6. Slice the cooked chicken and fluff the rice.
  7. Serve by adding rice to a bowl, topping with chicken, and drizzling chimichurri and garlic sauce on top.

Notes

  • Let the chimichurri rest for a few minutes before serving to enhance flavor.
  • Slice the chicken against the grain for better texture.
  • Adjust salt and acidity to taste before serving.
