Description

A refreshing and crunchy salad featuring shredded chicken, crisp vegetables, and a savory-sweet Asian-inspired dressing, perfect for a light meal or side dish.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 4 cups Napa cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup sliced almonds, toasted
  • 1 cup crispy chow mein noodles
  • 2 tbsp sesame seeds, toasted
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey
  • 1/4 cup vegetable oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, Napa cabbage, red cabbage, carrots, green onions, and cilantro.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, vegetable oil, and minced garlic to make the dressing.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Top with toasted almonds, sesame seeds, and crispy chow mein noodles just before serving.
  5. Serve immediately for the best crunch and flavor.

Notes

  • You can use rotisserie chicken for convenience.
  • Add mandarin orange segments for a fruity twist.
