Description

These Chocolate Raspberry Crumb Bars combine a buttery oat crumb crust, a layer of sweet raspberry jam, and a sprinkle of chocolate chips for a deliciously rich and fruity treat.


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups (180g) old-fashioned rolled oats
  • 3/4 cup (240g) raspberry jam or preserves
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture.
  4. Stir in the oats until fully combined. Reserve 1 1/2 cups of the crumb mixture for the topping.
  5. Press the remaining mixture into the bottom of the prepared pan to form a crust.
  6. Spread the raspberry jam evenly over the crust.
  7. Sprinkle the chocolate chips evenly over the jam layer.
  8. Crumble the reserved oat mixture evenly over the top.
  9. Bake for 30–35 minutes, or until the top is golden brown.
  10. Allow to cool completely in the pan before cutting into bars.

Notes

  • You can substitute raspberry jam with any berry jam of your choice.
  • For a nuttier texture, add chopped walnuts or almonds to the crumb topping.
  • Store in an airtight container for up to 5 days at room temperature or refrigerate for longer shelf life.
