- 2 boneless, skinless chicken breasts
- 6 oz Mexican chorizo (casing removed)
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded Oaxaca or mozzarella cheese
- 1/2 cup heavy cream
- 1/4 cup milk (optional, to thin the sauce)
- Fresh cilantro for garnish
Instructions
- Season the chicken breasts with garlic powder, paprika, salt, and pepper.
- In a skillet over medium heat, cook the chicken in olive oil until golden brown and cooked through, about 6–7 minutes per side. Remove and keep warm.
- In the same skillet, cook the chorizo until browned and crumbly, about 5 minutes. Drain excess fat if needed.
- Reduce heat to low, add heavy cream and shredded cheese to the skillet with the chorizo. Stir until melted and smooth. Add milk if needed to thin the sauce.
- Return the chicken to the skillet or slice and plate the chicken, then pour the chorizo cheese sauce over the top.
- Garnish with chopped fresh cilantro and serve with rice, beans, or tortillas.
Notes
- For extra flavor, marinate the chicken in lime juice and spices for 30 minutes before cooking.
- You can substitute Oaxaca cheese with mozzarella or Monterey Jack if unavailable.
- This dish pairs beautifully with Mexican rice or refried beans.
