Description

Flaky golden hand-pies filled with smoky chorizo, sweet pumpkin, and deeply caramelised onions for a cozy, crowd-pleasing bite.


Ingredients

  • Chorizo sausage, chopped: 250 g
  • Pumpkin, peeled and diced: 300 g
  • Brown onions, thinly sliced: 2 large
  • Olive oil: 2 tablespoons
  • Fresh thyme, chopped: 1 teaspoon
  • Fine salt: 1 teaspoon, to taste
  • Black pepper, freshly ground: 1/2 teaspoon, to taste
  • Puff pastry sheets, thawed: 4 large
  • Egg, beaten for egg wash: 1

Instructions

  1. Preheat Your Equipment: Heat oven to 200°C, 390°F, and line a baking tray with parchment.
  2. Combine Ingredients: Warm olive oil in a skillet over medium low heat, add onions and cook 12 to 15 minutes until deeply caramelised, add pumpkin and cook 6 to 8 minutes until just tender, stir in chorizo and thyme, season with salt and pepper, then cool 5 minutes.
  3. Prepare Your Cooking Vessel: Lightly flour the bench, lay out puff pastry sheets, and cut each into 4 equal squares.
  4. Assemble the Dish: Spoon 2 to 3 tablespoons filling onto one side of each square, fold over to form a triangle or rectangle, press edges with a fork to seal, and cut a small vent on top.
  5. Cook to Perfection: Arrange pies on the tray, brush tops with beaten egg, and bake 20 to 25 minutes until puffed and golden.
  6. Finishing Touches: Rest 5 minutes to let the filling settle and pastry crisp.
