Ingredients

  • Chicken Thighs: 2 pounds, tender and juicy
  • Carrots: 3 medium, sliced for sweetness and texture
  • Onions: 2 medium, sliced for caramelized depth
  • Garlic Cloves: 4, whole, aromatic richness
  • Fresh Thyme: 4 sprigs, earthy herbaceous notes
  • Bay Leaves: 2, subtle aromatic depth
  • Olive Oil: 2 tablespoons, for searing and coating vegetables
  • Chicken Broth: 2 cups, flavorful cooking base
  • Salt: 1 teaspoon, enhances flavors
  • Black Pepper: 1/2 teaspoon, gentle warmth and spice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pat chicken dry and season with salt and pepper.
  3. Heat olive oil in a cast iron or ovenproof pot over medium heat.
  4. Sear chicken until golden, remove, then sauté onions, carrots, and garlic.
  5. Return chicken to the pot, add chicken broth, thyme, and bay leaves.
  6. Cover and bake for 45–50 minutes until chicken is tender.
  7. Remove bay leaves and adjust seasoning if needed.
  8. Serve portions onto plates, pour sauce over, and enjoy.

  • Patting the chicken dry ensures a golden crust.
  • Do not overcrowd the pan to allow caramelization.
