Ingredients
- Chicken Thighs: 2 pounds, tender and juicy
- Carrots: 3 medium, sliced for sweetness and texture

Instructions
- Preheat oven to 350°F (175°C).
- Pat chicken dry and season with salt and pepper.
- Heat olive oil in a cast iron or ovenproof pot over medium heat.
- Sear chicken until golden, remove, then sauté onions, carrots, and garlic.
- Return chicken to the pot, add chicken broth, thyme, and bay leaves.
- Cover and bake for 45–50 minutes until chicken is tender.
- Remove bay leaves and adjust seasoning if needed.
- Serve portions onto plates, pour sauce over, and enjoy.
