- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon instant coffee granules
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
- Mix in instant coffee, egg, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients to form dough.
- In a small bowl, beat cream cheese and powdered sugar until smooth.
- Scoop a tablespoon of dough, flatten slightly, add a small spoonful of cheesecake mixture in the center, and top with another small piece of dough to seal.
- Place on baking sheet and repeat with remaining dough.
- Bake for 10–12 minutes until edges are set. Let cool on the tray before serving.
Notes
- Chill dough for 30 minutes if too sticky to handle.
- Store in the fridge for a firmer texture or enjoy warm for a gooey center.
- Add mini chocolate chips to the dough for extra indulgence.
