Description

Soft and chewy cookies with a rich coffee flavor and creamy cheesecake filling — the perfect blend of dessert and caffeine in every bite.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon instant coffee granules
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in instant coffee, egg, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients to form dough.
  5. In a small bowl, beat cream cheese and powdered sugar until smooth.
  6. Scoop a tablespoon of dough, flatten slightly, add a small spoonful of cheesecake mixture in the center, and top with another small piece of dough to seal.
  7. Place on baking sheet and repeat with remaining dough.
  8. Bake for 10–12 minutes until edges are set. Let cool on the tray before serving.

Notes

  • Chill dough for 30 minutes if too sticky to handle.
  • Store in the fridge for a firmer texture or enjoy warm for a gooey center.
  • Add mini chocolate chips to the dough for extra indulgence.
