Description

These cozy Coffee Crumble Muffins are infused with rich coffee flavor and topped with a buttery cinnamon crumble. Perfectly moist with a crunchy top, they’re ideal for breakfast, brunch, or an anytime treat.


Ingredients

  • 2 cups All-Purpose Flour
  • 3/4 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 2 tablespoons Instant Coffee or Espresso Powder
  • 3/4 cup Whole Milk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 4 tablespoons Butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and instant coffee.
  3. In another bowl, whisk milk, oil, eggs, and vanilla until well blended.
  4. Combine wet and dry ingredients, mixing just until combined. Do not overmix.
  5. Fill muffin cups about 3/4 full with batter and set aside.
  6. In a separate bowl, mix brown sugar, flour, cinnamon, and cubed butter with a fork until crumbly.
  7. Sprinkle crumble topping over each muffin generously.
  8. Bake for 18–20 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use room temperature ingredients for a smoother batter.
  • Don’t overmix the batter to avoid tough muffins.
  • Store in an airtight container for up to 3 days or freeze for up to 2 months.
