- 2 cups All-Purpose Flour
- 3/4 cup Granulated Sugar
- 1/4 cup Brown Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- 2 tablespoons Instant Coffee or Espresso Powder
- 3/4 cup Whole Milk
- 1/2 cup Vegetable Oil
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 4 tablespoons Butter, cold and cubed
Instructions
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and instant coffee.
- In another bowl, whisk milk, oil, eggs, and vanilla until well blended.
- Combine wet and dry ingredients, mixing just until combined. Do not overmix.
- Fill muffin cups about 3/4 full with batter and set aside.
- In a separate bowl, mix brown sugar, flour, cinnamon, and cubed butter with a fork until crumbly.
- Sprinkle crumble topping over each muffin generously.
- Bake for 18–20 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use room temperature ingredients for a smoother batter.
- Don’t overmix the batter to avoid tough muffins.
- Store in an airtight container for up to 3 days or freeze for up to 2 months.
