- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour (heat-treated)
- 1/2 tsp salt
- 2 tbsp milk
- 1/2 cup mini chocolate chips
- 1 pint ice cream (any flavor), slightly softened
Instructions
- Line a baking sheet with parchment paper and scoop small balls of ice cream using a melon baller or teaspoon. Freeze until solid (at least 1 hour).
- To make edible cookie dough, cream the butter and sugars together until fluffy.
- Add vanilla, milk, and mix. Stir in heat-treated flour and salt until combined.
- Fold in the mini chocolate chips.
- Take a small amount of cookie dough and flatten it in your hand. Place a frozen ice cream scoop in the center and gently wrap the dough around it to form a ball.
- Repeat with the remaining ingredients and return the bites to the freezer until ready to serve.
Notes
- To heat-treat flour, microwave it in a bowl for 1 minute, stirring every 20 seconds, or bake at 350°F (175°C) for 5 minutes to kill any bacteria.
- Use mini scoops for portion control and easy eating.
- Try different cookie dough flavors (like peanut butter or oatmeal) and ice cream varieties for fun combinations.
