Ingredients

- 1 cup cornmeal
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 tsp paprika (optional)
- 1 medium onion, finely chopped
- 3/4 cup water (or as needed)
- 2 tbsp chopped fresh parsley (optional)
- Oil for frying
Instructions
- In a mixing bowl, combine the cornmeal, flour, baking powder, salt, pepper, garlic powder, and paprika.
- Add the chopped onion and parsley, then stir to combine.
- Gradually mix in the water until the batter is thick but spoonable.
- Heat oil in a skillet over medium heat.
- Scoop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.
- Fry for 2–3 minutes per side, or until golden brown and crisp.
- Remove and drain on paper towels. Serve hot.
Notes
- You can add grated cheese or diced jalapeños for extra flavor.
- Use a non-stick skillet for easier frying and less oil.
- These patties reheat well in the oven or air fryer.
