Description

Crispy, savory cornmeal onion patties that are quick to prepare and perfect as a snack or side dish.


Ingredients

  • 1 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika (optional)
  • 1 medium onion, finely chopped
  • 3/4 cup water (or as needed)
  • 2 tbsp chopped fresh parsley (optional)
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, pepper, garlic powder, and paprika.
  2. Add the chopped onion and parsley, then stir to combine.
  3. Gradually mix in the water until the batter is thick but spoonable.
  4. Heat oil in a skillet over medium heat.
  5. Scoop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.
  6. Fry for 2–3 minutes per side, or until golden brown and crisp.
  7. Remove and drain on paper towels. Serve hot.

Notes

  • You can add grated cheese or diced jalapeños for extra flavor.
  • Use a non-stick skillet for easier frying and less oil.
  • These patties reheat well in the oven or air fryer.
