Description

Creamy, garlicky cottage cheese dip paired with crispy paprika-spiced potato wedges. A comforting snack or appetizer that’s full of flavor and easy to make.

Ingredients

Scale
  • 4 medium Russet Potatoes: cut into wedges
  • 3 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 ½ teaspoons Salt
  • ½ teaspoon Black Pepper
  • 1 cup Cottage Cheese
  • ½ cup Greek Yogurt
  • 2 Garlic Cloves: minced
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Fresh Parsley: chopped

Instructions

  1. Preheat Your Equipment: Set your oven to 425°F and place a baking sheet inside to preheat.
  2. Combine Ingredients: Toss potato wedges with olive oil, paprika, salt, and black pepper in a large bowl until evenly coated.
  3. Prepare Your Cooking Vessel: Line the hot baking sheet with parchment paper and spread the wedges in a single layer.
  4. Assemble the Dish: While potatoes roast, blend cottage cheese, Greek yogurt, garlic, lemon juice, salt, and parsley in a food processor until smooth.
  5. Cook to Perfection: Roast the wedges for 35–40 minutes, flipping halfway through, until golden and crispy.
  6. Finishing Touches: Taste the dip and adjust lemon juice or salt if needed. Garnish with more herbs.
  7. Serve and Enjoy: Serve the hot wedges with the chilled dip on the side.

Notes

  • Soak potato wedges in cold water for 30 minutes before roasting to increase crispiness.
  • Use full-fat cottage cheese for a richer dip texture.
  • The dip tastes better after chilling for at least 30 minutes.
  • Reheat leftover wedges in an air fryer for best results.
