- 1 pound pizza dough, room temperature
- 1 tablespoon olive oil, plus extra for brushing
- 1 cup cooked chicken breast, shredded or thinly sliced
- 6 ounces Brie cheese, rind on, sliced
- 1 cup low-moisture mozzarella cheese, shredded
- 1/2 cup cranberry sauce, homemade or canned
- 1 teaspoon fresh rosemary, finely chopped, plus extra for garnish
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Optional, 1 teaspoon honey for drizzling
- Optional, pinch of red pepper flakes
Instructions
- Preheat the oven to 450°F (230°C) and place a pizza stone or an inverted sheet pan inside to heat.
- Toss the cooked chicken with 1 teaspoon olive oil, salt, and pepper in a small bowl.
- On parchment, stretch the dough into a 12 to 13 inch round. Brush the surface lightly with olive oil.
- Spread the cranberry sauce evenly over the dough, leaving a small border. Scatter the chicken, then layer Brie slices and mozzarella. Sprinkle rosemary and red pepper flakes if using.
- Slide the parchment with the pizza onto the hot stone or pan. Bake 12 to 14 minutes until the crust is golden and the cheese is bubbling.
- Remove, rest 2 minutes, then drizzle with honey if desired and sprinkle extra rosemary.
- Slice and serve warm.
Notes
- For the crispiest crust, keep the stone or pan preheating for at least 20 minutes.
- If using very loose cranberry sauce, use a thin layer to avoid sogginess.
- Room temperature Brie melts more evenly.
- Leftovers reheat best in a 375°F oven for 6 to 8 minutes.
