Description
A creamy, comforting one-pan dish featuring orzo pasta coated in rich Boursin cheese, sweet blistered cherry tomatoes, and tender chicken. Perfect for quick dinners with big flavor.
Ingredients
Scale
- 1 cup orzo pasta
- 1.5 cups cherry tomatoes
- 1 round (5.2 oz) Boursin cheese (Garlic & Fine Herbs)
- 1.5 cups cooked chicken slices
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 cup heavy cream
- A handful of fresh basil leaves, chopped
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and drizzle in olive oil.
- Add cherry tomatoes and cook until they begin to blister and soften, about 5–7 minutes. Stir in minced garlic and cook for another minute.
- Push tomatoes to one side of the skillet and add orzo. Toast gently for 1–2 minutes.
- Pour in 2 cups of water and a pinch of salt. Bring to a simmer and cook orzo until tender and liquid is mostly absorbed.
- Lower the heat. Stir in Boursin cheese and heavy cream until melted and creamy.
- Fold in the cooked chicken slices and mix well.
- Season with black pepper and adjust salt if needed. Stir in chopped basil just before serving.
- Serve warm and enjoy.
Notes
- Use full-fat Boursin for the best creamy texture.
- Add spinach or mushrooms to boost veggie content.
- Reheat with a splash of milk or broth to loosen the sauce.
- Try adding lemon zest for extra brightness.
