Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets (fresh or frozen)
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 ½ cups milk
  • ½ cup vegetable or chicken broth
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Bring a pot of salted water to a boil. Cook orzo according to package directions, adding broccoli florets during the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Pour in milk and broth. Bring to a simmer, then reduce heat to low.
