Description
Creamy Broccoli Cheddar Orzo is a quick and comforting side dish that combines tender orzo pasta, vibrant broccoli, and rich cheddar cheese in a luscious, creamy sauce. Perfect for a weeknight dinner or potluck.
Ingredients
Scale
- 1 cup orzo pasta
- 2 cups broccoli florets (fresh or frozen)
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 ½ cups milk
- ½ cup vegetable or chicken broth
- 1 cup shredded sharp cheddar cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
- Pinch of nutmeg (optional)
Instructions
- Bring a pot of salted water to a boil. Cook orzo according to package directions, adding broccoli florets during the last 3 minutes of cooking. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Pour in milk and broth. Bring to a simmer, then reduce heat to low.
- Stir in cooked orzo and broccoli.
- Add cheddar and Parmesan cheese. Stir until melted and creamy.
- Season with salt, pepper, and a pinch of nutmeg if using.
- Serve warm as a side dish or light main course.
Notes
- Use freshly shredded cheese for the smoothest texture.
- For extra protein, add cooked chicken or white beans.
- Substitute whole milk with half-and-half for a richer result.
- Great way to use up leftover veggies—cauliflower or spinach also work well.
