Description

A rich and refreshing creamy chicken pasta salad made with tender chicken, crunchy veggies, and a tangy mayo-sour cream dressing. Perfect for picnics, meal prep, or casual family dinners.


Ingredients

  • 3 cups cooked rotini or penne pasta
  • 2 cups cooked chicken, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Set a pot of salted water to boil and cook pasta until just before al dente. Drain and rinse under cold water, then let cool.
  2. In a large bowl, mix mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until smooth.
  3. Add cooled pasta to the dressing. Then add chicken, celery, red onion, and parsley.
  4. Gently toss until everything is well coated and combined.
  5. Chill the salad for at least 20 minutes before serving to let the flavors meld.
  6. Serve cold and garnish with extra herbs if desired.
