- 3 cups cooked rotini or penne pasta
- 2 cups cooked chicken, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 stalks celery, finely diced
- 1/4 cup red onion, finely diced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Set a pot of salted water to boil and cook pasta until just before al dente. Drain and rinse under cold water, then let cool.
- In a large bowl, mix mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until smooth.
- Add cooled pasta to the dressing. Then add chicken, celery, red onion, and parsley.
- Gently toss until everything is well coated and combined.
- Chill the salad for at least 20 minutes before serving to let the flavors meld.
- Serve cold and garnish with extra herbs if desired.

- Use fresh herbs for the brightest flavor.
- If salad thickens in the fridge, add a spoonful of dressing before serving.
