  • 2 large chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter (divided)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth (for rice)
  • 2 large carrots, sliced
  • 1 cup green peas (fresh or frozen)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rice in water or chicken broth according to package instructions until fluffy. Set aside.
  2. Boil carrots in salted water for 6-8 minutes until just tender, then add green peas and cook for 2 more minutes. Drain and toss with 1 tablespoon butter. Season with salt and pepper.
  3. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt the remaining butter and sauté minced garlic for 1 minute until fragrant.
  5. Pour in chicken broth, heavy cream, and Italian seasoning. Stir and bring to a gentle simmer.
  6. Add Parmesan cheese and stir until the sauce is creamy and smooth.
  7. Return chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes.
  8. Serve chicken with rice, buttered carrots, and peas. Garnish with fresh parsley.
