- 1 cup long-grain white rice
- 2 cups water or chicken broth (for rice)
- 2 large carrots, sliced

Instructions
- Cook rice in water or chicken broth according to package instructions until fluffy. Set aside.
- Boil carrots in salted water for 6-8 minutes until just tender, then add green peas and cook for 2 more minutes. Drain and toss with 1 tablespoon butter. Season with salt and pepper.
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt the remaining butter and sauté minced garlic for 1 minute until fragrant.
- Pour in chicken broth, heavy cream, and Italian seasoning. Stir and bring to a gentle simmer.

- Return chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes.
