- 1 ½ cups whole milk
- 1 cup eggnog
- ½ cup granulated sugar
- 3 tablespoons cornstarch
- ¼ teaspoon salt
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Place your saucepan on the stove and set out all your ingredients so they’re within reach.
- In a mixing bowl, whisk together the egg yolks, sugar, cornstarch, salt, and a splash of milk until smooth. Then, in the saucepan, combine the remaining milk and eggnog and warm gently over medium heat.
- Once the milk mixture is warm (not boiling), slowly whisk it into the egg mixture to temper it.
- Pour everything back into the saucepan and place over medium heat.
- Stir constantly with a whisk until the mixture thickens and coats the back of a spoon, about 5 to 7 minutes.
- Remove from heat and stir in the butter, vanilla extract, nutmeg, and cinnamon until smooth.
- Pour into serving bowls or ramekins. Let cool slightly, then cover with plastic wrap (touching the surface) and chill for at least 2 hours before serving.
Notes
- Use fresh nutmeg for a more aromatic finish.
- Strain through a mesh sieve for ultra-smooth texture.
- Cover pudding with plastic wrap directly on the surface to prevent skin from forming.
- Serve with whipped cream and a dusting of cinnamon for extra flair.
