- 1 cup Orzo Pasta
- 2 cups Cremini Mushrooms, sliced
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 3 cups Vegetable Broth
- 1/2 cup Parmesan Cheese, grated
- 2 cups Fresh Spinach
- 1 tablespoon Butter
- Salt and Pepper, to taste
- 1 ball (4 oz) Burrata Cheese
- Chopped Chives, for garnish
- Pinch Red Pepper Flakes
Instructions
- Place a large skillet over medium heat and let it warm.
- Add olive oil and sliced mushrooms. Cook for 6–8 minutes until browned.
- Stir in minced garlic and orzo, toasting for 1–2 minutes.
- Pour in vegetable broth and bring to a simmer, stirring occasionally.
- Once orzo is tender and liquid mostly absorbed, stir in butter, spinach, and parmesan until melted.
- Let cook for another 2–3 minutes until creamy. Season with salt and pepper.
- Spoon into bowls, tear burrata over top, and garnish with chives and red pepper flakes.
- Serve warm and enjoy.
