Description

Ingredients

  • 1 cup Orzo Pasta
  • 2 cups Cremini Mushrooms, sliced
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 3 cups Vegetable Broth
  • 1/2 cup Parmesan Cheese, grated
  • 2 cups Fresh Spinach
  • 1 tablespoon Butter
  • Salt and Pepper, to taste
  • 1 ball (4 oz) Burrata Cheese
  • Chopped Chives, for garnish
  • Pinch Red Pepper Flakes

Instructions

  1. Place a large skillet over medium heat and let it warm.
  2. Add olive oil and sliced mushrooms. Cook for 6–8 minutes until browned.
  3. Stir in minced garlic and orzo, toasting for 1–2 minutes.
  4. Pour in vegetable broth and bring to a simmer, stirring occasionally.
  5. Once orzo is tender and liquid mostly absorbed, stir in butter, spinach, and parmesan until melted.
  6. Let cook for another 2–3 minutes until creamy. Season with salt and pepper.
  7. Spoon into bowls, tear burrata over top, and garnish with chives and red pepper flakes.
  8. Serve warm and enjoy.

  • Let burrata sit at room temperature before serving so it melts more easily.
  • Use a mix of mushrooms for more complex flavor.
