- 12 oz uncooked fettuccine
- 2 cups raw chicken pieces
- 3 tablespoons nduja sausage
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 3 garlic cloves, minced
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Salt to taste
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook fettuccine until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat a deep skillet over medium-high heat and add olive oil. Sear chicken pieces until golden and cooked through. Remove and set aside.
- In the same pan, melt butter. Add minced garlic and nduja, stirring until fragrant and melted.
- Reduce heat and pour in the heavy cream. Stir well, then add parmesan cheese. Mix until smooth and creamy.
- Add cooked pasta, seared chicken, and reserved pasta water to the sauce. Toss to coat everything evenly.
- Let it simmer for 1–2 minutes until sauce thickens and clings to pasta.
- Top with chopped parsley and black pepper. Serve hot with extra parmesan if desired.
Notes
- Use freshly grated parmesan for the best melting texture.
- Control the spice by adjusting the amount of nduja added.
- Add a splash of lemon juice to brighten the flavors.
