Description

A hearty and flavorful soup made with Italian sausage, tender vegetables, and a creamy Parmesan-infused broth. Perfect for cozy dinners and packed with comforting richness.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups chopped spinach or kale
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
  2. Add chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables are softened.
  3. Pour in chicken broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes until vegetables are tender.
  4. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently for another 5 minutes until the cheese is melted and the soup is creamy.
  5. Add chopped spinach (or kale) and cook until wilted, about 2–3 minutes.
  6. Season with salt, black pepper, and optional red pepper flakes to taste. Serve hot.

Notes

  • Use spicy sausage for a kick, or mix mild and spicy for balanced flavor.
  • Add potatoes or cooked pasta to make it even heartier.
  • Store leftovers in the fridge for up to 3 days. Reheat gently to preserve the creamy texture.
