- 1 lb Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups chopped spinach or kale
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Optional: red pepper flakes for heat
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
- Add chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables are softened.
- Pour in chicken broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes until vegetables are tender.
- Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently for another 5 minutes until the cheese is melted and the soup is creamy.
- Add chopped spinach (or kale) and cook until wilted, about 2–3 minutes.
- Season with salt, black pepper, and optional red pepper flakes to taste. Serve hot.
Notes
- Use spicy sausage for a kick, or mix mild and spicy for balanced flavor.
- Add potatoes or cooked pasta to make it even heartier.
- Store leftovers in the fridge for up to 3 days. Reheat gently to preserve the creamy texture.
