- 1 pound cheese ravioli
- 12 ounces sirloin steak
- 8 ounces white mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 2 teaspoons fresh thyme
- Salt and black pepper, to taste
Instructions
- Heat a large skillet over medium-high heat. Bring a pot of salted water to boil for the ravioli.
- Season the steak with salt and pepper. Mince garlic, slice mushrooms and cherry tomatoes.
- Add 1 tablespoon of olive oil to the skillet and sear steak for 3-4 minutes per side. Remove and let rest.
- In the same skillet, add the remaining oil. Sauté garlic and mushrooms until golden, then stir in tomato paste. Cook for 1 minute.
- Add cherry tomatoes and thyme. Pour in the cream and simmer for 3-5 minutes.
- Cook ravioli in boiling water until they float. Drain and add to the skillet with a splash of pasta water. Toss to coat.
- Slice rested steak thinly and place over the creamy ravioli. Season to taste.
- Garnish with fresh thyme or Parmesan and serve hot.
