- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups baby spinach
- 1 cup heavy cream
- 1/3 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Add shrimp in a single layer and cook for 2 minutes per side until pink. Remove and set aside.
- Lower the heat to medium and sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Pour in heavy cream, add Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Add spinach and stir until wilted.
- Return shrimp to the pan and cook for another 2–3 minutes.
- Stir in parmesan cheese until melted. Taste and adjust seasoning.
- Serve hot over pasta, rice, or with bread.
Notes
- Use large shrimp to prevent overcooking.
- Do not boil the cream to avoid curdling.
- Freshly grated parmesan gives the best flavor and texture.
