Description

Ingredients

  • 250 grams dry pasta
  • 3 large onions, thinly sliced
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons nutritional yeast
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add sliced onions and cook slowly, stirring occasionally, until deeply golden and caramelized, about 20 to 25 minutes. Add garlic and cook for another minute.
  5. Pour in vegetable broth and coconut milk, stir well, then add nutritional yeast, salt, and black pepper. Let it simmer gently until slightly thickened.
  6. Add the cooked pasta into the sauce and toss until evenly coated.
