- 250 grams dry pasta
- 3 large onions, thinly sliced
- 1 cup coconut milk
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 3 tablespoons nutritional yeast
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Cook the pasta according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook slowly, stirring occasionally, until deeply golden and caramelized, about 20 to 25 minutes. Add garlic and cook for another minute.
- Pour in vegetable broth and coconut milk, stir well, then add nutritional yeast, salt, and black pepper. Let it simmer gently until slightly thickened.
- Add the cooked pasta into the sauce and toss until evenly coated.
- Garnish with fresh parsley and serve warm.
