Description

Crinkly Crackly Butter Toffee Sugar Cookies are soft, chewy cookies with a sweet crunch from toffee bits and a crackled sugar top. These irresistible cookies bring the perfect balance of buttery richness and sweet texture to every bite.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/4 cups granulated sugar, plus extra for rolling
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups toffee bits (such as Heath bits o’ brickle)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in eggs one at a time, then add vanilla and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the toffee bits until evenly distributed.
  7. Roll dough into 1 1/2-inch balls, then roll each ball in granulated sugar to coat.
  8. Place dough balls on prepared baking sheets, spacing 2 inches apart.
  9. Bake for 10–12 minutes, until edges are golden and centers are set but still soft.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra crackle, roll dough twice in sugar before baking.
  • Chill dough for 30 minutes for thicker cookies with more chew.
  • Swap toffee bits for chocolate chips or chopped nuts for variation.
  • Store in an airtight container for up to 5 days or freeze for up to 2 months.
