Crispy Beef Taquitos with Chipotle Sauce are rolled tortillas stuffed with seasoned shredded beef, fried or baked to golden perfection, and served with a smoky, creamy chipotle dipping sauce. A satisfying and flavorful dish perfect for appetizers, snacks, or dinner.

- 2 cups cooked shredded beef (from roast or ground beef)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 cup shredded cheddar or Mexican blend cheese
- 10 small corn or flour tortillas
- Vegetable oil, for frying or brushing (if baking)
- For the Chipotle Sauce:
- 1/2 cup sour cream
- 1–2 chipotle peppers in adobo, minced
- 1 tablespoon adobo sauce
- 1 tablespoon lime juice
- Salt to taste
Instructions
- In a bowl, mix the shredded beef with chili powder, cumin, garlic powder, onion powder, salt, pepper, and cheese.
- Warm tortillas slightly to prevent cracking. Spoon about 2 tablespoons of the beef mixture onto each tortilla and roll tightly.
- To fry: Heat 1/2 inch of vegetable oil in a skillet over medium heat. Fry taquitos seam-side down until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
- To bake: Preheat oven to 425°F (220°C). Place rolled taquitos seam-side down on a baking sheet, brush with oil, and bake for 15–20 minutes until crispy.
- For the chipotle sauce: Mix sour cream, minced chipotle peppers, adobo sauce, lime juice, and a pinch of salt in a bowl. Adjust heat level to taste.
- Serve taquitos hot with chipotle sauce for dipping.
Notes
- You can use leftover roast beef, ground beef, or even shredded chicken.
- Flour tortillas will yield softer taquitos, while corn tortillas give a crunchier result.
- Add diced jalapeños or green chilies to the filling for extra heat.
