Description

Crispy Beef Taquitos with Chipotle Sauce are rolled tortillas stuffed with seasoned shredded beef, fried or baked to golden perfection, and served with a smoky, creamy chipotle dipping sauce. A satisfying and flavorful dish perfect for appetizers, snacks, or dinner.


Ingredients

  • 2 cups cooked shredded beef (from roast or ground beef)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 10 small corn or flour tortillas
  • Vegetable oil, for frying or brushing (if baking)
  • For the Chipotle Sauce:
  • 1/2 cup sour cream
  • 12 chipotle peppers in adobo, minced
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. In a bowl, mix the shredded beef with chili powder, cumin, garlic powder, onion powder, salt, pepper, and cheese.
  2. Warm tortillas slightly to prevent cracking. Spoon about 2 tablespoons of the beef mixture onto each tortilla and roll tightly.
  3. To fry: Heat 1/2 inch of vegetable oil in a skillet over medium heat. Fry taquitos seam-side down until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
  4. To bake: Preheat oven to 425°F (220°C). Place rolled taquitos seam-side down on a baking sheet, brush with oil, and bake for 15–20 minutes until crispy.
  5. For the chipotle sauce: Mix sour cream, minced chipotle peppers, adobo sauce, lime juice, and a pinch of salt in a bowl. Adjust heat level to taste.
  6. Serve taquitos hot with chipotle sauce for dipping.

Notes

  • You can use leftover roast beef, ground beef, or even shredded chicken.
  • Flour tortillas will yield softer taquitos, while corn tortillas give a crunchier result.
  • Add diced jalapeños or green chilies to the filling for extra heat.
