These crispy broccoli and cheddar cheese bites are a savory, cheesy, and veggie-packed snack or appetizer that’s perfect for any occasion. Easy to make and loved by both kids and adults.

- 2 cups broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (regular or panko)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or a little oil for baking/frying
Instructions
- Preheat the oven to 400°F (200°C) or heat oil in a skillet for frying.
- Steam or lightly blanch the broccoli for 2–3 minutes, then finely chop it.
- In a large bowl, combine chopped broccoli, cheddar cheese, breadcrumbs, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
- Mix well until the mixture holds together. If it’s too wet, add a bit more breadcrumbs.
- Form the mixture into bite-sized balls or small patties.
- Place them on a greased baking sheet or into the skillet with hot oil.
- Bake for 20–25 minutes until golden and crispy, flipping halfway through. If frying, cook for 2–3 minutes per side until golden brown.
- Let them cool slightly before serving. Enjoy with your favorite dipping sauce.
Notes
- Use pre-shredded broccoli slaw to save time.
- Add a pinch of chili flakes or paprika for extra flavor.
- Serve with ranch, garlic aioli, or marinara sauce.
- You can air-fry these at 375°F (190°C) for about 12–15 minutes.
