Instructions
- Preheat your oven to 200°C.
- Place the potatoes in a pot, cover with water, and boil for 8 minutes.
- Drain the potatoes and let them sit briefly to dry, then shake them gently to rough up the edges.
- Transfer the potatoes to a bowl, add olive oil, salt, black pepper, garlic, and herbs, then toss well.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 35 minutes, turning halfway through, until golden and crispy.
- Adjust seasoning if needed and serve hot.
