Description

  • 2 medium chicken breasts, sliced lengthwise
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 large head romaine lettuce, chopped
  • 1/2 cup freshly shaved parmesan cheese
  • 1 cup croutons
  • 1/2 cup Caesar dressing
  • 2 large potatoes, sliced into thick rounds
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat Your Equipment: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: Set up a breading station with bowls of flour, beaten eggs, and panko breadcrumbs mixed with garlic powder, salt, and pepper.
  3. Prepare Your Cooking Vessel: Heat 2 tablespoons olive oil in a skillet over medium-high heat. Toss potatoes with 1 tablespoon olive oil, garlic powder, salt, and pepper, and arrange on the baking sheet.
  4. Assemble the Dish: Dredge chicken in flour, then egg, then breadcrumbs. Fry until golden, 3–4 minutes per side. Bake chips for 25–30 minutes, flipping halfway.
  5. Cook to Perfection: Transfer cooked chicken to paper towel-lined plate. Remove chips once golden and crisp.
  6. Finishing Touches: Toss romaine with Caesar dressing, croutons, and half the parmesan. Top with sliced chicken and remaining parmesan.
