Description

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko or regular)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • Ranch dressing, for serving

Instructions

  1. Prepare a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  2. Dip each zucchini slice in the flour, then in the egg, and finally coat with the breadcrumb mixture. Press gently to adhere.
  3. Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
  4. Fry zucchini slices in batches for 2–3 minutes per side or until golden brown and crispy.
  5. Transfer to a paper towel–lined plate to drain excess oil.
  6. Serve warm with ranch dressing for dipping.

Notes

  • Use an air fryer for a lighter version—cook at 400°F for 10–12 minutes, flipping halfway through.
  • Add cayenne pepper to the breadcrumb mix for a spicy kick.
  • Try dipping in marinara or spicy aioli instead of ranch for variety.
