- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (Panko or regular)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper to taste
- Vegetable oil for frying
- Ranch dressing, for serving
Instructions
- Prepare a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each zucchini slice in the flour, then in the egg, and finally coat with the breadcrumb mixture. Press gently to adhere.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
- Fry zucchini slices in batches for 2–3 minutes per side or until golden brown and crispy.
- Transfer to a paper towel–lined plate to drain excess oil.
- Serve warm with ranch dressing for dipping.
Notes
- Use an air fryer for a lighter version—cook at 400°F for 10–12 minutes, flipping halfway through.
- Add cayenne pepper to the breadcrumb mix for a spicy kick.
- Try dipping in marinara or spicy aioli instead of ranch for variety.
