Description

A cozy and creamy slow cooker dinner made with tender chicken, carrots, potatoes, peas, and a rich savory gravy, finished with fluffy biscuit pieces for an easy comfort food meal.


Ingredients

  • 2 pounds boneless skinless chicken, cut into chunks
  • 2 cups sliced carrots
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons all purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can refrigerated biscuit dough, about 8 biscuits

Instructions

  1. Turn the slow cooker to low heat so it can begin warming while you prepare the ingredients.
  2. In a mixing bowl, whisk together the chicken broth, heavy cream, melted butter, all purpose flour, dried thyme, salt, and black pepper until smooth.
  3. Lightly grease the inside of the slow cooker.
  4. Add the chicken, carrots, potatoes, diced onion, minced garlic, and frozen peas to the slow cooker.
  5. Pour the sauce mixture over the ingredients and gently stir to combine.
  6. Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and the vegetables are soft.
  7. Bake the refrigerated biscuit dough separately according to the package directions.
  8. Cut the baked biscuits into pieces and place them over the hot chicken mixture before serving.
  9. Spoon into bowls and serve warm.

Notes

  • For a thicker filling, let the mixture sit uncovered for 10 to 15 minutes before serving.
  • You can swap the potatoes for sweet potatoes for a slightly sweeter flavor.
  • Fresh thyme can be used instead of dried thyme for a brighter herbal taste.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
