- 2 pounds boneless skinless chicken, cut into chunks
- 2 cups sliced carrots
- 2 cups diced potatoes
- 1 cup frozen peas
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 3 tablespoons unsalted butter, melted
- 3 tablespoons all purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can refrigerated biscuit dough, about 8 biscuits
Instructions
- Turn the slow cooker to low heat so it can begin warming while you prepare the ingredients.
- In a mixing bowl, whisk together the chicken broth, heavy cream, melted butter, all purpose flour, dried thyme, salt, and black pepper until smooth.
- Lightly grease the inside of the slow cooker.
- Add the chicken, carrots, potatoes, diced onion, minced garlic, and frozen peas to the slow cooker.
- Pour the sauce mixture over the ingredients and gently stir to combine.
- Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and the vegetables are soft.
- Bake the refrigerated biscuit dough separately according to the package directions.
- Cut the baked biscuits into pieces and place them over the hot chicken mixture before serving.
- Spoon into bowls and serve warm.
Notes
- For a thicker filling, let the mixture sit uncovered for 10 to 15 minutes before serving.
- You can swap the potatoes for sweet potatoes for a slightly sweeter flavor.
- Fresh thyme can be used instead of dried thyme for a brighter herbal taste.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
