- 1.5 pounds raw chicken, diced
- 1 cup wild rice, uncooked
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 cup heavy cream
- 1 tablespoon olive oil
Instructions
- Add the chicken, wild rice, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper to the crockpot. Stir to combine.
- Optionally, sauté the vegetables in olive oil before adding for deeper flavor.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Once cooked, shred the chicken directly in the pot using two forks.
- Stir in the heavy cream and cook on low for another 10–15 minutes.
- Taste and adjust seasonings as needed. Serve warm.
Notes
- Use a wild rice blend for extra texture.
- Add fresh herbs at the end for brightness.
- Soup thickens when stored, add a splash of broth when reheating.
- For dairy-free, use full-fat coconut milk instead of cream.
