- 1½ pounds boneless skinless chicken, cut into bite sized pieces
- 12 ounces penne pasta
- 1 cup heavy cream
- 1½ cups chicken broth
- 1 cup freshly grated parmesan cheese
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the slow cooker on the low setting while preparing the ingredients.
- In a bowl, combine the chicken pieces with salt, black pepper, minced garlic, and diced onion until evenly mixed.
- Lightly grease the slow cooker with olive oil.
- Add the seasoned chicken mixture to the slow cooker and pour in the chicken broth and heavy cream.
- Cover and cook on low for 4 hours until the chicken becomes tender.
- Stir in the penne pasta and grated parmesan cheese. Continue cooking for 25 to 30 minutes until the pasta is tender and the sauce thickens.
- Finish by stirring the pasta gently so the sauce coats everything evenly.
- Sprinkle chopped parsley over the top before serving.

- Use freshly grated parmesan for smoother melting and better flavor.
- If the sauce becomes too thick, stir in a small splash of chicken broth.
- Stir once or twice during the final cooking stage to help the pasta cook evenly.
