- 2 boneless skinless chicken breasts
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (frozen or canned)
- 1 can (10 oz) Rotel (diced tomatoes & green chiles)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 4 oz cream cheese, cubed and softened
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- Juice of 1 lime
- Salt and pepper to taste
- Tortilla strips for topping
- Fresh cilantro for garnish
Instructions
- In your crockpot, add chicken breasts, black beans, corn, Rotel, diced onion, minced garlic, cumin, chili powder, salt, pepper, and chicken broth.
- Stir everything gently to combine and cover with the lid.
- Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until chicken is tender.
- Remove chicken, shred with forks, then return to crockpot.
- Add cream cheese, heavy cream, and shredded cheddar. Stir until melted and smooth.
- Stir in lime juice, adjust seasoning to taste.
- Serve hot with tortilla strips, cilantro, and optional toppings.
Notes
- Add cream cheese at the end to avoid curdling.
- Use freshly shredded cheese for best melt.
- To freeze, leave out the cream and cheese until reheating.
- For extra heat, add jalapeños or chipotle peppers.
