Description

This Crockpot Loaded Steak and Potato Bake is a hearty, comfort-food classic made easy in the slow cooker. Tender steak, seasoned potatoes, gooey cheese, and crispy bacon come together for a satisfying all-in-one meal that’s perfect for busy nights.


Ingredients

  • 1.5 pounds sirloin or flank steak, cut into bite-sized cubes
  • 2 pounds russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream (for serving, optional)

Instructions

  1. Lightly grease the crockpot insert with cooking spray or a small amount of oil.
  2. In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Layer half of the seasoned potatoes in the bottom of the crockpot, followed by half of the steak cubes.
  4. Repeat the layers with the remaining potatoes and steak.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender and steak is cooked through.
  6. In the last 10–15 minutes of cooking, sprinkle shredded cheddar cheese over the top and cover to let it melt.
  7. Once melted, top with crumbled bacon and green onions before serving. Add a dollop of sour cream if desired.

Notes

  • Use Yukon Gold potatoes for a creamier texture if preferred.
  • To save time, pre-cook the steak slightly for added flavor.
  • Customize with your favorite cheese or add a spicy kick with jalapeños.
