This Crockpot Loaded Steak and Potato Bake is a hearty, comfort-food classic made easy in the slow cooker. Tender steak, seasoned potatoes, gooey cheese, and crispy bacon come together for a satisfying all-in-one meal that’s perfect for busy nights.

- 1.5 pounds sirloin or flank steak, cut into bite-sized cubes
- 2 pounds russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- 1/2 cup sour cream (for serving, optional)
Instructions
- Lightly grease the crockpot insert with cooking spray or a small amount of oil.
- In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Layer half of the seasoned potatoes in the bottom of the crockpot, followed by half of the steak cubes.
- Repeat the layers with the remaining potatoes and steak.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender and steak is cooked through.
- In the last 10–15 minutes of cooking, sprinkle shredded cheddar cheese over the top and cover to let it melt.
- Once melted, top with crumbled bacon and green onions before serving. Add a dollop of sour cream if desired.
Notes
- Use Yukon Gold potatoes for a creamier texture if preferred.
- To save time, pre-cook the steak slightly for added flavor.
- Customize with your favorite cheese or add a spicy kick with jalapeños.
