Description
Creamy, cozy, and packed with rich garlic parmesan flavor, this slow cooker chicken dish combines tender chicken, sun dried tomatoes, and spinach in a velvety sauce that feels comforting and special at the same time.
Ingredients
Scale
- 2 pounds boneless skinless chicken thighs
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup chopped sun dried tomatoes
- 2 cups fresh spinach
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your slow cooker on low heat.
- In a mixing bowl, combine the heavy cream, chicken broth, minced garlic, Italian seasoning, salt, and black pepper.
- Lightly grease the slow cooker with olive oil.
- Place the chicken thighs in the slow cooker and pour the cream mixture over the top. Add the chopped sun dried tomatoes.
- Cover and cook on low for 4 hours, until the chicken is tender and fully cooked.
- Stir in the grated parmesan cheese and fresh spinach during the last 10 minutes of cooking, until the spinach wilts and the sauce turns creamy.
- Serve warm over pasta, rice, mashed potatoes, or with crusty bread.
Notes
- Freshly grated parmesan melts more smoothly than pre shredded cheese.
- Add the spinach near the end so it keeps its color and soft texture.
- Let the dish rest for a few minutes before serving if you want the sauce slightly thicker.
- A squeeze of lemon or a sprinkle of fresh parsley can brighten the final flavor.
