Description

Creamy, cozy, and packed with rich garlic parmesan flavor, this slow cooker chicken dish combines tender chicken, sun dried tomatoes, and spinach in a velvety sauce that feels comforting and special at the same time.


Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup chopped sun dried tomatoes
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your slow cooker on low heat.
  2. In a mixing bowl, combine the heavy cream, chicken broth, minced garlic, Italian seasoning, salt, and black pepper.
  3. Lightly grease the slow cooker with olive oil.
  4. Place the chicken thighs in the slow cooker and pour the cream mixture over the top. Add the chopped sun dried tomatoes.
  5. Cover and cook on low for 4 hours, until the chicken is tender and fully cooked.
  6. Stir in the grated parmesan cheese and fresh spinach during the last 10 minutes of cooking, until the spinach wilts and the sauce turns creamy.
