- 2 pounds russet potatoes, peeled and chopped
- 4 tablespoons unsalted butter, melted
- 1/4 cup heavy cream, warmed
- 3 large egg yolks
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Pinch of freshly grated nutmeg
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil potatoes in salted water until fork-tender, about 15 minutes. Drain and allow to steam dry for 5 minutes.
- Mash potatoes until smooth. Stir in melted butter, warmed cream, salt, pepper, nutmeg, and egg yolks until fully combined.
- Transfer the mixture to a piping bag fitted with a large star tip.
- Pipe swirls onto the prepared baking sheet, spacing them about an inch apart.
- Bake for 18–20 minutes, or until tops are golden and crisp.
- Let rest a couple minutes before serving. Optionally, garnish with fresh herbs.
