- 1 French baguette, sliced into 1/2-inch pieces
- 2 tablespoons olive oil (for brushing bread)
- 4 ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Optional: 1 clove garlic (whole, for rubbing toast)
Instructions
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush with olive oil.
- Toast in the oven for 7–9 minutes, or until golden and crisp. Let cool slightly.
- In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and extra virgin olive oil. Season with salt and pepper.
- If desired, rub the toasted baguette slices with a garlic clove for added flavor.
- Spoon the tomato mixture onto each slice of bread just before serving to prevent sogginess.

- Use vine-ripened or Roma tomatoes for the best flavor and less water content.
