Description

A comforting, hearty one-pot meal, Easy Chicken and Dumplings features tender chicken, fluffy biscuit dumplings, and a creamy, flavorful broth. Perfect for weeknight dinners or cozy weekends.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup milk
  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and cook for about 5 minutes until softened.
  2. Add garlic and cook for another minute.
  3. Sprinkle in the flour and stir to coat the vegetables evenly. Cook for 1–2 minutes to remove the raw flour taste.
  4. Gradually add the chicken broth while stirring to avoid lumps. Bring to a gentle boil.
  5. Add shredded chicken, frozen peas, thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
  6. Stir in the milk and bring back to a simmer.
  7. Drop biscuit dough pieces into the simmering mixture. Cover the pot with a lid and cook for 15–20 minutes, or until the dumplings are cooked through and fluffy.
  8. Garnish with chopped parsley if desired and serve hot.

Notes

  • Use pre-cooked rotisserie chicken to save time.
  • Don’t lift the lid while the dumplings are cooking to ensure they steam properly.
  • For richer flavor, stir in a tablespoon of butter at the end.
  • You can make your own dumplings from scratch if preferred.
