- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 6 cups chicken broth
- 2 cups cooked shredded chicken (rotisserie chicken works great)
- 1 cup frozen peas
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup milk
- 1 can (16 oz) refrigerated biscuit dough, cut into quarters
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and cook for about 5 minutes until softened.
- Add garlic and cook for another minute.
- Sprinkle in the flour and stir to coat the vegetables evenly. Cook for 1–2 minutes to remove the raw flour taste.
- Gradually add the chicken broth while stirring to avoid lumps. Bring to a gentle boil.
- Add shredded chicken, frozen peas, thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Stir in the milk and bring back to a simmer.
- Drop biscuit dough pieces into the simmering mixture. Cover the pot with a lid and cook for 15–20 minutes, or until the dumplings are cooked through and fluffy.
- Garnish with chopped parsley if desired and serve hot.
Notes
- Use pre-cooked rotisserie chicken to save time.
- Don’t lift the lid while the dumplings are cooking to ensure they steam properly.
- For richer flavor, stir in a tablespoon of butter at the end.
- You can make your own dumplings from scratch if preferred.
