- 1 package gluten-free phyllo or puff pastry sheets
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 10 oz (300g) fresh spinach, washed and chopped
- 1 cup crumbled feta cheese
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
- Add chopped spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, combine cooked spinach mixture, feta, dill, parsley, oregano, salt, and pepper.
- Cut gluten-free pastry sheets into squares (about 4×4 inches).
- Place a spoonful of the spinach filling in the center of each square. Fold to form parcels (triangles or rectangles) and seal edges by pressing with a fork.
- Brush each parcel with beaten egg for a golden finish.
- Bake for 20–25 minutes or until pastry is golden and crispy.
- Serve warm as an appetizer or snack.

- You can substitute fresh herbs with dried if needed, adjusting quantities.
