Description

These Easy Gluten Free Spanakopita Parcels are a delicious twist on the classic Greek spinach and feta pie, made with gluten-free pastry for a flaky, savory treat perfect for appetizers or light meals.


Ingredients

  • 1 package gluten-free phyllo or puff pastry sheets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz (300g) fresh spinach, washed and chopped
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
  3. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  4. In a bowl, combine cooked spinach mixture, feta, dill, parsley, oregano, salt, and pepper.
  5. Cut gluten-free pastry sheets into squares (about 4×4 inches).
  6. Place a spoonful of the spinach filling in the center of each square. Fold to form parcels (triangles or rectangles) and seal edges by pressing with a fork.
  7. Brush each parcel with beaten egg for a golden finish.
  8. Bake for 20–25 minutes or until pastry is golden and crispy.
  9. Serve warm as an appetizer or snack.

  • Ensure spinach is well-drained to avoid soggy pastry.
  • You can substitute fresh herbs with dried if needed, adjusting quantities.
