This easy Miso-Ginger Chicken with Spicy Broth is a flavorful and comforting dish ready in just 30 minutes. It features tender chicken simmered in a bold, umami-rich miso broth infused with ginger, garlic, and a touch of heat.

- 4 boneless, skinless chicken thighs
- 4 cups chicken broth (low sodium preferred)
- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp fresh ginger, grated
- 2 garlic cloves, minced
- 1 tbsp sesame oil
- 1–2 tsp chili paste or Sriracha (to taste)
- 2 green onions, sliced
- 1 cup bok choy or spinach, chopped
- 1 tbsp rice vinegar (optional, for brightness)
- Cooked rice or noodles, for serving
Instructions
- In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add chicken thighs and sear for 2–3 minutes on each side (they don’t need to be fully cooked at this point).
- Pour in chicken broth, soy sauce, and chili paste. Bring to a gentle simmer.
- Cover and simmer for 15 minutes until the chicken is cooked through.
- Remove the chicken, shred it with two forks, then return it to the pot.
- Reduce heat to low and stir in miso paste until fully dissolved (avoid boiling miso to preserve its flavor).
- Add chopped greens and let wilt for 2 minutes. Stir in rice vinegar if using.
- Serve hot over cooked rice or noodles, garnished with sliced green onions.
Notes
- Use tofu instead of chicken for a vegetarian version.
- Adjust chili paste based on spice preference.
- This broth also pairs well with mushrooms, shredded carrots, or snap peas.
