Description

This easy Miso-Ginger Chicken with Spicy Broth is a flavorful and comforting dish ready in just 30 minutes. It features tender chicken simmered in a bold, umami-rich miso broth infused with ginger, garlic, and a touch of heat.

Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 4 cups chicken broth (low sodium preferred)
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp sesame oil
  • 12 tsp chili paste or Sriracha (to taste)
  • 2 green onions, sliced
  • 1 cup bok choy or spinach, chopped
  • 1 tbsp rice vinegar (optional, for brightness)
  • Cooked rice or noodles, for serving

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  2. Add chicken thighs and sear for 2–3 minutes on each side (they don’t need to be fully cooked at this point).
  3. Pour in chicken broth, soy sauce, and chili paste. Bring to a gentle simmer.
  4. Cover and simmer for 15 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it with two forks, then return it to the pot.
  6. Reduce heat to low and stir in miso paste until fully dissolved (avoid boiling miso to preserve its flavor).
  7. Add chopped greens and let wilt for 2 minutes. Stir in rice vinegar if using.
  8. Serve hot over cooked rice or noodles, garnished with sliced green onions.

Notes

  • Use tofu instead of chicken for a vegetarian version.
  • Adjust chili paste based on spice preference.
  • This broth also pairs well with mushrooms, shredded carrots, or snap peas.
