Description
Crispy egg rolls stuffed with savory corned beef, tangy sauerkraut, and melty Swiss cheese, served with a creamy Thousand Island dipping sauce. A fun, party-ready twist on the classic Reuben sandwich.
Ingredients
Scale
- 2 cups chopped corned beef
- 1 1/2 cups shredded Swiss cheese
- 1 cup sauerkraut, drained and squeezed dry
- 12 egg roll wrappers
- 3 cups vegetable oil, for frying
- 1/2 cup mayonnaise
- 3 tablespoons ketchup
- 2 tablespoons sweet pickle relish
- 1/2 teaspoon onion powder
- 1/4 teaspoon fine salt, plus more to taste
- 1/8 teaspoon black pepper
Instructions
- Preheat Your Equipment: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Combine Ingredients: In a mixing bowl, stir together chopped corned beef, shredded Swiss cheese, and well-drained sauerkraut until evenly combined.
- Prepare Your Cooking Vessel: Line a sheet pan with parchment and set a small bowl of water nearby for sealing the wrappers.
- Assemble the Dish: Place one wrapper on a clean surface with a corner facing you. Spoon about 2 tablespoons of filling near the bottom corner. Fold the bottom over the filling, fold in the sides, then roll tightly, sealing the final edge with water. Repeat with remaining wrappers and filling.
- Cook to Perfection: Fry egg rolls in batches, 3 to 4 minutes, turning as needed, until deep golden and crisp. Transfer to a wire rack to drain and stay crisp.
- Finishing Touches: In a small bowl whisk mayonnaise, ketchup, sweet pickle relish, onion powder, salt, and pepper until smooth to make the Thousand Island sauce. Adjust seasoning to taste.
- Serve and Enjoy: Serve egg rolls hot with the creamy Thousand Island dipping sauce on the side.
Notes
- For best crunch, squeeze sauerkraut very dry before mixing.
- Do not overcrowd the fryer, maintain oil near 350°F for even browning.
- To bake instead of fry, brush rolls lightly with oil and bake at 400°F (200°C) for 18 to 20 minutes, turning once.
- Leftovers reheat well in an air fryer at 350°F for 4 to 6 minutes.
