Description
A silky, tropical mango pudding made with ripe mangoes, creamy coconut milk, and just the right touch of sweetness. This easy no-bake dessert is light, refreshing, and perfect for making ahead.

- 2 large ripe mangoes, about 2 cups pureed
- 1 cup full fat coconut milk
- 1/4 cup granulated sugar
- 2 teaspoons unflavored gelatin powder
- 3 tablespoons warm water
Instructions
- Peel and chop the ripe mangoes, then blend until completely smooth.
- In a small bowl, mix the gelatin with warm water and let it bloom for 5 minutes.
- In a small saucepan over low heat, warm the coconut milk and granulated sugar until the sugar fully dissolves.
- Stir the bloomed gelatin into the warm coconut milk mixture until fully dissolved. Do not boil.
- Remove from heat and mix in the mango puree until smooth and evenly combined.
- Pour the mixture into serving glasses or ramekins and gently tap to remove air bubbles.
- Refrigerate for at least 3 hours, or until fully set. Serve chilled with fresh mango cubes on top if desired.
Notes
- Use very ripe mangoes for the best natural sweetness and flavor.
- Do not overheat the gelatin mixture, high heat can prevent proper setting.
- Chill overnight for a firmer texture and deeper flavor.
- Agar agar can be used instead of gelatin for a vegetarian option, follow package instructions for quantity.
