Instructions

- In another bowl, whisk orange juice, zest, oil, yogurt, and vanilla until smooth.
- Gently fold wet ingredients into dry until just combined.
- Fill muffin cups about two-thirds full.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
