Description

Ingredients

  • 1 1/2 cups crushed pistachio cookies or graham crackers
  • 1/2 cup finely chopped pistachios
  • 1/3 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pistachio pudding mix
  • 1/2 cup sour cream
  • 1 cup heavy cream, whipped
  • 1 cup fresh raspberries
  • 1/2 cup raspberry preserves
  • 1/4 cup crushed pistachios (for topping)
  • 1/4 cup white chocolate chips (optional for crunch)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, combine crushed pistachio cookies, chopped pistachios, and melted butter. Press into the bottom of the pan to form the crust. Bake for 10 minutes and set aside.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, pistachio pudding mix, and sour cream until combined.
  4. Pour filling over the crust and smooth the top. Bake for 55-65 minutes or until the center is set. Turn off oven, crack the door open, and let cheesecake cool for 1 hour before refrigerating for at least 4 hours or overnight.
  5. Before serving, spread raspberry preserves over the cheesecake. Top with fresh raspberries, crushed pistachios, and white chocolate chips for crunch.
  6. Slice and serve chilled for the best flavor and texture.
