Fiesta Tater Tot Casserole is a fun and flavorful Tex-Mex inspired dish made with ground beef, beans, cheese, and tater tots, all baked together into a comforting, crispy-topped casserole.

- 1 tablespoon olive oil
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 cup frozen corn
- 2 cups shredded cheddar cheese
- 1 package (32 oz) frozen tater tots
- Salt and pepper, to taste
- Optional toppings: chopped green onions, sour cream, sliced jalapeños, chopped cilantro
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add ground beef and onion; cook until browned. Drain excess fat.
- Add garlic and taco seasoning. Stir to coat the meat evenly.
- Mix in black beans, diced tomatoes with chilies, and corn. Cook for 3-4 minutes until heated through. Season with salt and pepper to taste.
- Transfer beef mixture to the prepared baking dish and spread evenly.
- Sprinkle 1 1/2 cups of the cheese over the mixture.
- Arrange tater tots in a single layer over the top.
- Bake for 35-40 minutes, or until tater tots are golden brown and crispy.
- Sprinkle the remaining cheese over the tots and return to oven for 5 minutes until melted.
- Remove from oven, let rest for a few minutes, and top with optional garnishes before serving.
Notes
- Swap ground beef with ground turkey or plant-based meat for variation.
- Use spicy cheese or pepper jack for extra kick.
- Serve with a side of guacamole or salad for a complete meal.
