Description

Fiesta Tater Tot Casserole is a fun and flavorful Tex-Mex inspired dish made with ground beef, beans, cheese, and tater tots, all baked together into a comforting, crispy-topped casserole.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • 1 package (32 oz) frozen tater tots
  • Salt and pepper, to taste
  • Optional toppings: chopped green onions, sour cream, sliced jalapeños, chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and onion; cook until browned. Drain excess fat.
  3. Add garlic and taco seasoning. Stir to coat the meat evenly.
  4. Mix in black beans, diced tomatoes with chilies, and corn. Cook for 3-4 minutes until heated through. Season with salt and pepper to taste.
  5. Transfer beef mixture to the prepared baking dish and spread evenly.
  6. Sprinkle 1 1/2 cups of the cheese over the mixture.
  7. Arrange tater tots in a single layer over the top.
  8. Bake for 35-40 minutes, or until tater tots are golden brown and crispy.
  9. Sprinkle the remaining cheese over the tots and return to oven for 5 minutes until melted.
  10. Remove from oven, let rest for a few minutes, and top with optional garnishes before serving.

Notes

  • Swap ground beef with ground turkey or plant-based meat for variation.
  • Use spicy cheese or pepper jack for extra kick.
  • Serve with a side of guacamole or salad for a complete meal.
