Description

A flaky puff pastry tart layered with creamy ricotta, melty brie, and sweet ripe figs, finished with toasted walnuts and a drizzle of honey. Perfectly balanced between savory and sweet.


Ingredients

  • 1 sheet Puff Pastry, thawed
  • 3/4 cup Ricotta Cheese
  • 4 oz Brie Cheese, sliced
  • 6 to 8 Fresh Figs, halved
  • 1 tbsp Honey
  • 1 tsp Fresh Thyme
  • Pinch of Salt
  • Black Pepper to taste
  • 2 tbsp Walnuts, chopped and toasted (optional)
  • 1 Egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix ricotta with a pinch of salt, pepper, and half the thyme in a bowl.
  3. Roll out the puff pastry on the baking sheet. Score a 1-inch border and prick the center with a fork.
  4. Spread ricotta mixture inside the border. Layer with brie slices, fig halves, walnuts, and remaining thyme.
  5. Brush edges with egg wash and bake for 20–25 minutes until golden and puffed.
  6. Cool for 5 minutes, drizzle with honey, and add fresh black pepper.
  7. Slice and serve warm or at room temperature.

Notes

  • Use cold puff pastry for best flakiness.
  • Roast walnuts for a deeper flavor.
  • Add a smear of fig jam under ricotta for extra sweetness.
