A hearty and flavorful layered casserole packed with seasoned ground beef, beans, corn, cheese, and tortillas—bringing all your favorite Mexican flavors into one easy baked dish.

- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen or canned corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
- 1 cup salsa
- 2 cups shredded cheddar or Mexican blend cheese
- 6 small flour or corn tortillas
- 1/2 cup chopped onion
- Olive oil for sautéing
- Optional: sliced olives, jalapeños, chopped cilantro
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a skillet over medium heat, heat a little olive oil and sauté onions until translucent.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning and 1/2 cup water. Simmer for 2–3 minutes.
- Add black beans, corn, diced tomatoes with chilies, and salsa. Mix well and simmer for another 2–3 minutes. Remove from heat.
- Layer 3 tortillas on the bottom of the prepared baking dish. Spread half the meat mixture over the tortillas and top with 1 cup cheese.
- Repeat the layers with remaining tortillas, meat mixture, and cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Let rest 5 minutes before slicing. Garnish with optional toppings if desired.
Notes
- You can substitute the meat with cooked shredded chicken or make it vegetarian by using extra beans and veggies.
- Add a dollop of sour cream or guacamole when serving for extra richness.
- Great for meal prep—stores well in the fridge or freezer.
