Description

Soft and chewy flourless peanut butter cookies with crisp edges and rich peanut flavor, made with just a few simple pantry ingredients.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, granulated sugar, egg, and vanilla extract until smooth and fully blended.
  3. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them apart.
  4. Use a fork to gently press a crisscross pattern on the top of each cookie.
  5. Bake for 9 to 11 minutes, until the edges are set and the centers remain soft.
  6. Let the cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

  • For softer cookies, slightly underbake and allow them to set while cooling.
  • Stir peanut butter well if using a brand that separates.
  • Cookies firm up as they cool, so avoid overbaking.
