Description
Soft and chewy flourless peanut butter cookies with crisp edges and rich peanut flavor, made with just a few simple pantry ingredients.
Ingredients
Scale
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, granulated sugar, egg, and vanilla extract until smooth and fully blended.
- Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them apart.
- Use a fork to gently press a crisscross pattern on the top of each cookie.
- Bake for 9 to 11 minutes, until the edges are set and the centers remain soft.
- Let the cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Notes
- For softer cookies, slightly underbake and allow them to set while cooling.
- Stir peanut butter well if using a brand that separates.
- Cookies firm up as they cool, so avoid overbaking.
